Kara Sev


Ingredients:
Besan Flour (Kadala maavu)- 3/4 cup
Pottukadalai / Roasted Gram  powdered - 1/4 cup (Just powder it , no need to roast)
Ghee - 1 tbsp
Chilli Powder - 1/2 tsp
Black pepper - 1 tsp coarsely powdered
Garlic paste - 1 tsp
Salt - to taste
Oil - for deep frying
Method:
1. In a mixing bowl add besan flour, roasted gram powder, chilli powder, ghee, powdered pepper, garlic paste(finely ground) and salt. 
2. Mix them well till you form a crumbling mixture. Then add water little by little to form a dough.
3. The dough will be sticky but still do not make it hard. Because it will make pressing very difficult.
4. Fill the murukku press with the dough and press it in hot oil. 
5. Do not overload. Just make small circles.
6. Fry in medium flame till golden brown , turn over to cook on both sides evenly. 
7. Once they are done take and keep aside in tissue paper to remove the extra oil. 
8. Cool down completely and break into pieces and then store in airtight container.

Mysore Pak


Ingredients:
  • Besan Flour / Kadalai maavu - 1 cup
  • Sugar - 1 cup
  • Ghee / Clarified butter - 1 cup 
  • Water - 1/4 cup

Method:
1. Take a pan and add a tsp of ghee.
2. Then add the besan flour and roast it till a nice aroma.
3. It'll take few minutes. But be careful, you should not fry brown.
4. Then see to that no lumps found. 
5. Now in a bowl, add the roasted besan flour and 3/4 cup ghee with and mix them well. (divide the cup of ghee into 3/4 cup + 1/4 cup)
6. The mixture should be in slightly pouring consistency. Keep aside for 15mins. 
7. Take a nonstick pan, add sugar and water.(Add water to just immerse the sugar. Do not add too much water) Keep in medium flame, and bring it to a boil
8. Boil well for 4 to 5 minutes and check for a string consistency(If you take the sugar syrup between the thumb and the index finger a single string will be formed. That's the correct consistency.
9. Meanwhile, grease a square pan with little ghee and set aside. 
10. Now add the besan ghee mixture to the sugar syrup. Now add the remaining 1/4 cup ghee little by little to avoid lumps and mix well.
11. Now sim the flame and keep mixing continuosly, add little ghee. 
12. Finally the consistency will be like the mixture will not stick to the pan.
13. At this stage switch off and pour it in the ghee greased plate. Just tap the square pan to spread them uniformly.
14. Cut it into any shape as per your wish and enjoy your mysore pak.

Mixed Fruit Salad

Ingredients:
  • Banana - 1
  • Grapes - 1/4 cup
  • Strawberry - 5 nos
  • Apple - 1
  • Whipped Cream - to garnish

Method:
  1. It's so simple to prepare and it is really a healthy dish.
  2. Just peel and cut the apples into cubes.
  3. Same way slice the strawberry and keep aside.
  4. Then take a bowl, add the grapes, apples, strawberry and sliced bananas.
  5. Then decorate it with whipped cream and serve it delicious. 

Vazhakkai / Plantain Fry


Ingredients:

Vazhakkai /Plantain - 3 Nos
Chilli Powder - 1 tsp
Salt - as required
Hing - 1/4 tsp
Turmeric Powder - pinch
Corn Flour - 1 tsp
Gram Flour - 1/4 tsp

To Season:

Curry Leaves
Mustard Seeds - 1/2 tsp
Cumin Seeds - 1/4 tsp
Urud Dhal - 1/2 tsp

This recipe will serve 2.


Method:

1. Take 3 vazhakkai and cook it with the skin in pressure cooker for one whistle.
2. Then remove from the stove and allow it to cool.
3. Then remove the skin from it and cut it into round pieces.
4. Then marinate them with salt, chilli powder, corn flour, gram flour, hing and turmeric powder.
5. Take a pan, add oil and heat it.
6. When the oil is ready, add mustard seeds anad splutter them. Then add urud dhal, cumin seeds, curry leaves and saute them well.
7. Once they turn golden brown color, then add the marinated vazhakkai and fry them well.


8. Be careful that the vazhakkai does not get mashed up.
9. Just turn now and then and see to that they are fried on both the sides.


10. Once they are fried the recipe is ready to serve. Kids will love this...

Banana Mango Madness


Ingredients:
  • Mango - 1 cup
  • Banana -1/2 cup
  • Sugar - to taste required
  • Milk - 1/2 cup



Method:

Hey its a very simple but delicious cool recipe and everybody will love it.
  1. Blend the mango and banana together.
  2. Then add Sugar and milk as much required to blend them.
  3. Refrigerate them for few minutes to cool them.
  4. Once done, Yummy cold dessert is ready to go.

Strawberry Banana milkshake


Ingredients:
  • Strawberry - 5 
  • Banana - 1
  • Sugar - 2 tsp
  • Milk - Small quantity / konjam
Method:
  1. Very simple to make this smoothie. 
  2. Take a juicer add the strawberry, banana, sugar and blend them well.
  3. Blend them with no lumps. 
  4. Then add small quantity of milk and blend it well and the smoothie is ready .... 
  5. Go on with yummy mouth watering smoothie......

Custard Fruit Salad

Ingredients:
  • Milk - 4 cup and 4 tbsp
  • Sugar - 1 cup
  • Custard powder - i used 3 tbsp ( u can use to your taste)
  • Fruits -  Banana, Apple, Grapes, Strawberry, Pomegranate
Method:
1. Take a pan and add 4 cups of milk, sugar and boil them.
2. Then dissolve the custard powder with rest of 4 tbsp of chill milk. ( the purpose of using chill milk is to avoid lumps while mixing them, because when you directly add the custard powder to the hot milk, they spoil the whole stuff.)
3. After dissolving it, add them to the hot milk and stir them well till they thicken well.
4. Switch off and remove the custard mix and allow it to cool.
5. Chop the fruits well and add custard mix and refridgerate them and cool it for atleast an hour.
 6.  Top them with pomegranate and serve this ...  
 Delicious Custard fruit salad is ready.. Kids will love this ...

Idiyappam - Rice Noodles


Ingredients
Rice Flour - 2 Cups
Salt - a pinch
Water - 2 to 3 cups (Boil the water well)
Oil - to coat the idli pan( I used idli cooker to prepare the idiyappam)
Method
1. I steamed the rice flour for 2 minutes. This will make the flour soft.
2. Then add salt to the flour and mix them well.
3. Boil the water well and add the flour to the hot water and mix using a spatula.
4. Mix them well and form them into nice dough.
5. I used the murukku maker to prepare the idiyappam. You can use this disc to make them.
6. Fill the murukku maker with a portion of the dough and press it to get the idiyappam.
7. Press the idiyappam over the greased idli plate.
8. I use the pressure cooker and idli cooker for steaming idiyappam. (steam them for 10minutes as you do for idlis)
9. After steaming you can have the sevai as is with some kuruma or with some sugar sprinkled over it.
This goes well with kadala Curry.
Yummy and soft idiyappam is ready to serve.

Pista Kulfi Icecream-My 150th post

Hi friends....

This is my 150th post an i wanted that to be something cool....
So when i saw this recipe from Viki's Kitchen.... I decided to try and post this.

Ingredients:

Pista - 20 nos
Sweetened Condensed Milk - 14 oz can
Heavy Whipped Topping - 8 oz
green food color - 1 pinch(dissolved in water)
To soak and grind:


Cashew nut - 10
pista (pistachio) - 1/4 cup
cardamom seeds - 5 nos
saffron - few strands
Method:


1. Soak the above mentioned nuts overnight and grind to a fine paste.
2. In a pan, dry roast the pistachio nuts and chop it to small pieces. Let it cool completely.
3. In a mixing bowl add the ground paste, food color and Condensed milk . (Food Color gives a wonderful pista color to the dish)
4. Then blend the whipping cream well till a peaky consistency is formed.
5. Then add the whipping cream and sliced pista to the bowl and mix gently.(Do not mix too much . It'll make them harder)
7. Then transfer them to a freezer-safe container, cover and freeze for 3-4 hours.

Creamy rich pista kulfi ice cream is ready! Just keep out for few minutes at room temperature before serving
Kids will surely love this :)
