Yennai Kathrikkai Kara Kuzhambu



Ingredients:
  • Oil - 1/2 tsp
  • Coriander Seeds - 1 tbsp
  • Cumin Seeds - 1/2 tsp
  • Pepper - 1/4 tsp
  • Red Chillies - 2
  • Onion - 1 (Long sliced)
  • Tomato - 1 (Optional)
  • Brinjals - 5 -6 nos
  • Mustard Seeds - 1/2tsp
  • Curry Leaves - 2 strings
  • Turmeric - 1/4 tsp
  • Tamarind extract - 1 cup
  • Pottukadalai - 1 tbsp powdered
  • Coconut powder - 1 tbsp
  • Jaggery - little quantity
  • Coriander leaves and curry leaves - to garnish
  • Salt - as required


Method:


1. Take a pan, add oil and roast  coriander seeds,  cumin seeds,  pepper,  red chillies until raw smell goes away.
2. Then saute half of the onion until it gets transparent (do not roast the onions too much) and then grind it along with the above roasted spices to a fine paste and set aside. 


3. Then cut the whole brinjal into 4 slits with the stem remain intact.
4. Then saute the brinjals in oil till it is well fried and set aside.
5. In the same oil, temper some mustard seeds, curry leaves
6. Then saute the finely chopped onion. (You can even add some sliced tomatoes if you wish and cook till the tomatoes are getting soft.)
7. Add salt, and a pinch of turmeric powder.
8. Then add the ground paste to the gravy.  Saute until oil leaves the sides.
9. Add 1 cup tamarind juice and let it cook for 1 min. Then put the fried brinjals and cover it and cook until brinjals are well done.
10. Add the powdered pottu kadalai and saute well. 
11. Once the oil literally leaves the sides, add little jaggery to it and cook for another 5 minutes. Once done switch the stove off and garnish with curry leaves and coriander leaves. Serve hot with rice. You'll never believe ... such a yuumy dish u know.
