Rice Noodles / Idiyappam


Ingredients:
  • Rice noodles
  • Mustard seeds - 2 tsp
  • Urud Dhal - 4 tsp
  • Channa dhal - 4 tsp
  • Cumin Seeds - 2 tsp
  • Curry Leaves
  • Turmeric powder
  • Hing - to taste
  • Lime Juice - 2 tbsp
  • Coconut - 1/2 cup
  • Coriander leaves - to garnish



Method:
  1. Microwave the rice noodles for ten minutes or boil the rice noodles in a pan for ten to 15 minutes until the rice noodles becomes tender.
  2. After they are cooked drain and keep them aside.
  3.  We are going to prepare lemon and coconut idiyappam.
For Lime idiyappam:
  1. Take a pan, add oil and heat it.
  2. Once the oil is ready, add 1 tsp of each mustard seeds, cumin seeds, urud dhal, channa dhal, curry leaves, hing and turmeric powder.
  3. Thus saute them well and once the dhal turns golden brown color
  4. The add the drained rice noodles, salt and mix them well. Turn off the stove and add Lime juice to it.
  5. The lime rice noodles is ready to serve.
For Coconut Idiyappam:
  1. Take a pan, add oil and heat it.
  2. Once the oil is ready, add 1 tsp of  each mustard seeds, cumin seeds, urud dhal, channa dhal, curry leaves, and hing.

  3. Thus saute them well and once the dhal turns golden brown color.
  4. Then add the shredded coconut and saute them well. 
  5. Then add the drained rice noodles, salt and mix them well.
  6. The coconut rice noodles is ready to serve.
Thus garnish the prepared rice noodles with cilantro.
