Gobi Paratha



Ingredients:

    *  Cauliflower   -  1 big
    * Coriander leaves(chopped)  - 1/2 cup (can add less also)
    * Onion - 1/2 Finely chopped
    * Ginger(finely chopped)  -  3/4 tsp
    * Green chilly (chopped)  - 1(optional)   
    * Turmeric powder          - 1/4 tsp
    * Garam masala powder   -  1/2 tsp
    * Red chilly powder         - 3/4 tsp
    * Asafetida                    - a pinch
    * Cumin seeds                - 1 tsp
    * salt and oil as needed



Method:

For gobi stuffing:

* Grate the cauliflower with a grater / blender, as shown in the picture.
* Keep ready the other ingredients required for the stuffing.
* Take a pan, heat it, then add  cumin seeds, hing, ginger, green chilli, onions in the same order.



* Fry for a minute and then add the grated  cauliflower, and add turmeric, red chilie and garam masala powders, coriander leaves and sprinkle salt.


* Fry and saute well in medium high heat for 5-6 minutes,with constant stirring ( Constant stirring will avoid burning at bottom ).
* Saute well till the cauliflower turns soft.
* The mixture will turn half the amount. Transfer to a bowl after allow it to cool down.


For the dough:

* Mix wheat flour, salt and then add water as required and mix well and make a soft dough. and oil,well.
* Tip: If you need the dough to be soft add warm water and mix them softly to make the dough.
* Make sit the dough for atleast half an hour ( this will give you soft chapathis ).


To prepare the parathas:

* Take the dough ( Small lime size ) and take medium lemon size stuffing, then first roll the dough little and stuff the gobi inside and close it nicely and make them sit foe 2 minutes before rolling it. ( This will help the stuff not some out when you r rolling the parathas... ).
* Then after 2 minutes roll the parathas.


* Take a pan and heat it. Then put the rolled parathas and apply oil to cook.


* Then when one side is cooked well then turn to the other sides.


* Press on all sides so that it cooks uniformly.
* Then apply some butter on top and tan ta dan.... yummy parathas are ready to go into your tummy.
* You can serve these parathas with any gravy or with any varieties of raitha.
