Uppu Kozhukattai


Ingredients:

For the Dough:
  • Rice Flour - 3/4 cup
  • Water - 1/2 cup + some tbsp of water
  • Salt - a pinch
  • Sugar - a pinch
  • Sesame Oil - 1 1/2 tsp
Uppu Kozhukattai Poornam:
  • Urud dhal - 1/2 cup 
  • Green chilli - 1/2 
  • Ginger - Gooseberry size
  • Oil - to cook
  • Mustard Seeds - 1 1/2 tsp
  • Curry Leaves - 1 string
  • Urud Dhal - 1 tsp
  • Channa Dhal - 1/2 tsp
  • Salt - to taste
Method:

To Prepare the dough:

* First take the rice flour and dilute it to the batter consistency.( Do not dilute it too much)
(For 1 cup rice flour take 1 cup of water)
* Then take a pressure cooker and add the sesame oil into that along with pinch of sugar and salt.
* Then once the water comes to boil add the diluted rice flour batter to it and stir it continuously.
* Then keep the stove at low and close the lid of the pressure cooker.
* Cook it for 4 to 6 minutes without any whistles.
* Then open the lid of the pressure cooker and stir the mixture, that's where you get a good soft dough consistency.
* Then take the dough out and allow it to cool and then knead the dough to make it softer. 
* The dough is ready.

Uppu Poornam:

* Take urud dhal and soak it for 1/2 an hour.
* Then drain the dhal and add salt as required and grind it coarsely along with green chilli, ginger and then add salt and mix them well.
* Then cook it in idli cooker.
* Once done just add it in blender to make it loose.
* Then take a pan, add oil and add mustard seeds, curry leaves and splutter it.
* Then add the blended mixture and saute them well and mix it.
* Uppu Poornam is ready.

Kozhukkatai:

* Take the dough (gooseberry size) and press it and make it into cup shape and then stuff the prepared poornam and then close it and make it to a ball shaped kozhukattai.


* Then once the kozhukattai is ready then steam it and cook for ten minutes.
* Once done allow it to cool for some time.
* Tasty yummy uppu kozhukattai is ready to taste.
