Vegetable Kurma

Ingredients:
  • French Beans - 1/4 Cup
  • Carrot - Finely Chopped 1/4 Cup
  • Potato - 2 finely chopped
  • Peas - 1/4 Cup
  • Onion - 1 small Chopped
  • Tomato - 1 Chopped
  • Ginger Garlic Paste - 2 tbsp
  • Cinnamon Stick - 2
  • Cloves - 2
  • Star Anise -1
  • Garam Masala Powder - 1/2 tsp
  • Turmeric Powder - 1/2 tsp
  • Salt - To taste


 You can use mixed frozen vegetables to prepare this kurma which contains Beans, Carrots, Corns, Beans.

To Grind:
  • Green Chillies - 1
  • Coriander Seeds - 1 tsp
  • Cumin Seeds - 1 tsp
  • Cilantro
  • Saunf / Fennel Seeds - 1/2 tsp
  • Cashews - Broken 1 tbsp
  • Coconut - 6 tbsp


Method:

1. Heat 4 tsp of oil in a pan. Add 1 tsp of ghee in a pressure cooker.2. Add Cinnamon sticks, Cloves, Anise Star. Saute them and add onions and saute them till they turn golden brown.3. Then add the ginger garlic paste and saute them till they cook well.4. After they cook well, add tomatoes and cook till they become soft.5. Then add all the vegetables and add salt, garam masala powder and turmeric powder.6. Saute them till they are cooked slightly. Then add the ground masala and fry for some time. 


7. Mix well and  add 11/2 glass of water to the mixture and close the pressure cooker and leave 1 Whistle and then keep the stove and medium flame and cook well. 8. Turn off the stove and after it cools down garnish the kurma with cilantro.
